Beatrice Mercantile Building’s First Business…a Brewery…is Opening

BEATRICE – After several months renovating a downtown building that dates back to the 1870s, Todd and Sonia Hydo are seeing along with the public, the opening of the first business…the Stone Hollow Brewing Company.

It’s located on the main floor of what’s now known as the Beatrice Mercantile Building, at 3rd and Court.

A ribbon-cutting was held by the Beatrice Area Chamber of Commerce Thursday morning, for Stone Hollow Brewing Company and the Smoke and Fire Cigar Shop.  Bryon Belding manages the Stone Hollow Brewing Company.

The Hydos’, the Clabaugh family, the operator of Stone Hollow and two others from Lincoln are investors in the project.   Rick Clabaugh said the Hydos’ have done a wonderful job with the building, which is at the west edge of the downtown. Todd Hydo explains the work that’s gone on so far, on a building that was in danger of collapsing.

About half of the work is finished at the Beatrice Mercantile Building.

The brewing apparatus can be viewed by customers from the main floor, situated through a hole cut in the lower level of the building.  Hydo, who operates Lammel Plumbing in Beatrice, did the connecting work for the brewing floor.  It includes several tanks and a conversion process, to produce alcohol.

Hydo said he wanted to make sure the plumbing for the brewing process was done right and looks clean.

Under the bar, is a walk-in cooler that has been renovated and is the original 1917 cooler that was in the building…complete with the original nameplate on the door, built by the Ehrlich and Sons Manufacturing Company.  The brewing floor was raised above the original floor.  The building’s original wood and stone walls were preserved.

The Stone Hollow Brewing Company was set to open, Thursday night.
